By local we mean zero-km products from companies located no more than a few kilometres from our hotel, thereby offering higher guarantees of freshness precisely because there is no, or almost no transport or transferring involved.
We also made this choice to boost local production, thereby restoring our link with the area, at the same time learning about typical flavours and gastronomic traditions.
Therefore, choosing zero-km products becomes a way to learn about the seasonality and typicality of the place we live in.
And we pass this knowledge on to everyone who chooses to stay with us.
It’s a choice that goes hand in hand with the sustainability criteria we pursue seriously in various areas of our hotel management.
Evo del Borgo Olive Oil
The olive oil on your table comes from the heart of the Euganean Hills, from one of the most beautiful villages in Italy.
The ancient village of Arquà Petrarca, situated on the slopes of Mount Bignago, is where the Callegaro family carries out all of the processing stages: from the harvesting of the olives to the final extraction of the oil, obtaining an excellent product of absolute quality.
The fields where the olive trees grow are just 800 metres from the mill, where different types of olive oil are produced so as to offer consumers a zero-km product from a short supply chain.

Evo Organic Olive Oil is a certified organic olive oil created for those who love taking care of themselves, starting with what they eat.
The idea was to create an olive oil for those who love their land and their well-being, by combining tradition, innovation, and the continuous desire to seek quality in all of the production processes.
The result was this fruity and delicate olive oil. Certified organic farming allows you to create high quality products without the use of chemicals, as well as meet the needs of all lovers of certified products obtained with respect for our land.
We chose this product so as to offer our guests bring the very best olive oil, which guarantees the extremely high quality that that Evo del Borgo products are renowned for.
The oil’s a straw green colour with golden highlights. It’s smooth and delicate, with hints of almond and wildflowers.
Its flavour makes it ideal for seasoning delicate dishes.
EVO Vulcanico Extra Virgin Olive Oil PDO Veneto Euganei and Berici.
An Extra Virgin Olive Oil with PDO certification, created from a blend of select Rasara, Leccino, Pendolino, Grignano and Leccio del Corno olives, cold-pressed in order to maintain their characteristics.
This PDO oil is produced with olives from the Euganean Hills and is a characteristic intense green colour with golden highlights.
It is fairly fruity with a strong, persistent flavour, and is therefore recommended for seasoning red meat.
There are notes of almond and artichoke and hints of leaves and freshly mown grass.
It releases a slight hint of bitterness and a balanced spiciness on the palate.
Evo Moonlight Olive Oil, the oil of the full moon.
People have always been fascinated by the moon and all of its phases influence crops, showing farmers and peasants the right moment to sow or harvest.
Moonlight Olive Oil was created from this link between heaven and earth, by collecting the best olives on the first full moon in October.
The idea was to make an olive oil that gives those who taste it the same feeling of wonder as a moonlit night.
The fruit come from centuries-old olive groves cultivated on Mount Ventolone, at a height of 350 metres: these are the highest groves in Arquà Petrarca, as well as the most south-facing.
The olives are harvested at night, protected from the sun’s rays and temperature changes: with only moonlight.
They are processed immediately to create an excellent Extra Virgin Olive Oil: an expression of fragrance, taste and aroma.
Moonlight Olive Oil oozes personality and character. It’s intense shades of golden green and has a delicate, persistent flavour.
What makes it unique is its overwhelming taste, releasing a slight spicy and bitter note on the palate.
