In this article, we will delve into a sweet and enchanting Christmas story, that of the panettone. This dessert has become an indispensable delight on festive tables throughout Italy. But where does this delicacy come from? Let’s discover together its fascinating origins.
The Birth of Panettone: Between History and Legend
Like many gastronomic delights associated with festivities, the story of panettone is also shrouded in a delicate veil between history and legend. What is certain is that this dessert was born in Milan, and its origin is surrounded not by one, but by three fascinating tales.
The most widely accepted narrative takes us back to 1495, with the story of Toni, immersing us in the court of Ludovico Maria Sforza, known as Ludovico il Moro, the lord of Milan.
On Christmas Eve, the courtiers gather around sumptuous tables, ready to celebrate with a feast befitting such a special day. The kitchens are a flurry of activity, with each staff member busy preparing various dishes. Amidst this hustle and bustle, the head chef assigns a young scullery boy named Toni to oversee the baking of the dessert intended to conclude the majestic meal.
However, Toni, exhausted, falls asleep, causing the dessert to burn. Fearing the head chef’s reaction, Toni desperately tries to remedy his mistake.
Fortunately, he had previously prepared a dessert for himself and his friends, using leftovers from the enriched bread dough with eggs, butter, candied fruit and raisins. Deciding to take a risk, Toni proposes his creation to the head chef as a dessert for the Duke’s guests. After an initial moment of uncertainty, the head chef is convinced to serve it on the table.
The unexpected success is such that the dessert is nicknamed “el pan de Toni” (Toni’s bread) in the Milanese dialect, in honor of its creator.
Over the years, the recipe spreads throughout Italy, and the name undergoes a transformation: from “pan de Toni,” it becomes the beloved panettone that we know today.
